Cauliflower Pizza – Lowcarb/ Keto/Healthy

Sometimes we want to eat a delicious pizza, but the first thing that comes to mind is the dough made of wheat flour that for many of us could cause a body reaction, it can cause inflammation or maybe we cannot digest it well. For this reason, I share this pizza with the dough made of cauliflower that is lighter, healthier, and helps us maintain an ideal weight.

INGREDIENTS:                                                                                                       

Crust:

  • 1 cauliflower approx. 1 kg, grated
  • 1 beaten egg
  • 1/3 cup soft goat cheese
  • 1 garlic clove crushed (optional) but gives a nice taste
  • 1 teaspoon dried oregano 
  • pinch of salt

Suggested dressings: (optional)

  • Tomato sauce (only tomato and salt and garlic)
  • 1 cup shredded mozzarella cheese (or parmesan cheese shredded)
  • 1 sliced ​​tomato o cherry tomatoes in half
  • Basil at ease
  • 1 cup spinach
  • 1/2 pepper in strips
  • 1/4 red onion in strips
  • 2 slices of prosciutto in pieces
  • asparagus

In this case, I only use spinach, cherry tomatoes, and some shredded parmesan cheese on top.

 

INSTRUCTIONS:

  • Preheat the oven to 400ºF.
  • Fill a large pot over medium heat with an inch of water. Place a steam basket in the pot, then pour the raw cauliflower into the steam basket. Bring the water to a boil and cover the pot, steaming the cauliflower until it is very tender and can be pierced with a fork.
  • Drain all excess moisture! (Be careful if your cauliflower is still hot; you can let it cool before handling it.) A large amount of additional liquid will be released, which will leave it with a nice and dry pizza crust.
  • In a large bowl, mix the squeezed rice, egg, goat cheese, and spices. (Don’t be afraid to use your hands! You want it very well mixed). It won’t be like any pizza dough you’ve worked with, but don’t worry, it will stay together!
  • Press the dough on a baking sheet lined with parchment paper. (It is important that it be lined with parchment paper, or it will stick.) Keep the dough 1/4 “to 1/2” thick and make the edges slightly higher to obtain a “crust” effect, if desired.
  • Bake for 30-35 minutes at 400F, until they are dry and golden brown. Use the parchment paper to flip the crust and bake again until the other side is well and dry for another 10 to 15 minutes.
  • Add your favorite pizza ingredients to the crust, such as sauce and cheese, then return the 400F baked pizza. Bake an additional 5 to 10 minutes, until the cheese is hot and bubbly. Slice and serve warm. You can eat it on a bed of spinach leaves as a side dish. Enjoy
